The Most Delicious Soft And Chewy Double Chocolate Peanut Butter Cookies

They melt in your mouth...one of the best cookies I have ever made.

I have been perfecting this recipe time and time again to figure out the most perfect chocolate peanut butter cookie and I can finally say, it's perfect. I am so excited to bring it here to you.

I truly feel like one of the tricks here is the cake flour, it gives the cookie a moist soft melty texture that's rather tempting. They are delicious on their own, or with milk. They are rich and chocolaty and have a wonderful peanut butter flavor, the frosting is the cherry on top!

Double Chocolate Peanut Butter Cookies


Cookie Recipe

  • 1/2 cup (1 stick) unsalted butter, room temperature

  • 1/2 cup crisco

  • 1 cup white sugar

  • 1 cup brown sugar packed

  • 2 tsp vanilla

  • 2 large eggs

  • 3 cups cake flour

  • 1 tsp baking soda

  • 1/2 tsp baking powder

  • 1 tsp sea salt

  • 1/3 cup cocoa

  • 1 cup semi sweet chocolate chips

  • 1 cup reese's peanut butter chips

  • 1/2 cup hot coffee

  • about 1/2 cup peanut butter

Frosting Recipe

  • 4-5 cups powdered sugar

  • 1/2 cup one cube of butter (room temp)

  • 1/2 a cube of cream cheese

  • 4-6 tablespoons oat milk

  • 1/2 cup peanut butter


Directions

  1. Preheat to 375°F and line 2 baking sheets with parchment paper.

  2. In a large bowl, cream the butter, crisco, white sugar, brown sugar, peanut butter, and vanilla extract until light and fluffy. Then add your eggs to the mix one at a time.

  3. I make my own cake flour. For instructions on how to do that click here. (you will need a seperate bowl if you make your own) or you can use store bought.

  4. Sift in the cake flour, cocoa, baking soda, baking powder, and salt.

  5. Mix in the dry ingredients slowly till combined

  6. Add boiling coffee and mix

  7. Add your chocolate and reese's chips mix till combined

  8. Using a cookie scoop or an ice cream scoop, scoop your cookie dough and roll them into balls.

  9. Bake for 8 minutes cookies won't look done yet. Remove the cookies from the oven and set them on a cooling rack to cool while you make your frosting.

  10. In a medium size bowl add your butter, cream cheese, peanut butter and combine. slowly add in your powder sugar a scoop at a time. ( I use about 3-5 cups) it will make it thicker and sweeter so taste it along the way. Add oat milk a tablespoon at a time to thin the frosting.

  11. Add your frosting to a piping bag with a big circle tip. Starting in the center of the cookie pipe the frosting going in a circle outward. Voila! Your cookies are ready. Serve them right after or store them in an airtight container for up to 1 week.

I used tip number 3 in this piping set.


Side Note: You can use the base of this cookie recipe and get a delicious chocolate chip cookie, just take out the cocoa, peanut butter, and coffee.
